Maui has entered into the era of local booze. We’ve never had so many spirits, wines and brews created on our soil. It seems that mixologists, barkeeps and neighborhood bar owners all have locally sourced drinks, whether they’re Maui Brewing Co. seasonal brews, Pau Vodka Mules, Maui Wines or organic Deep Island Rum. While our local spirits are on the rise, the Mainland is seeing a decline in the neighborhood bar, perhaps a victim to all the crafting and our insatiable desire for gastro-pub fare. Mixology continues to push the envelope, most recently a trend towards incorporating more unusual edibles–like ones with six legs.
In our annual bar guide, we check in with the local bar scene by listing the top 25 bars on Maui and asking the bar professionals that work there for theinsider tips to sipping and supping at their fine establishments. 1. Cow Pig Bun
Cow Pig Bun is: “Burgers and Bourbon.” It’s a speakeasy style bar with a focus on whiskey and pre-Prohibition style co*cktails that serves a small menu of killer burgers and sandwiches. We tend to keep the lights low, the music mellow and the food and drinks flowing. We’re located in the Kihei Tech Park across from Maui Brew Co. in a dark mirrored building that doesn’t look like it houses a restaurant. It’s an interesting location, but I think it adds to the speakeasy vibe as it can be difficult to find. We have a great local crowd as they are the ones who can find us. From 4-6pm we do happy hour with 30 percent off all food, $2 off beer and house co*cktails. Those burgers are a steal and worth every penny!
Best Neighborhood Bar: I enjoy seeing my neighbors at Moose McGillycuddy’s, but I turn Maui Brew Co. into my office on many occasions. It’s quiet enough, plenty of space, the views good and they have wi-fi. Plus, it always smells like fresh bread. Gotta love the smell of beer being made.
Fantasy Bug co*cktail: I think ant salt would definitely be the way to start. I know they’re a little peppery, and mixed in with some chili or black pepper would make for a fun rim. I would love to see a combination of corn, mezcal and honey. You can even incorporate a fried worm or grub on a pick. Hey, that’s not a bad co*cktail idea!

Monkeypod Bar is: A place that serves great drinks, made with the best possible ingredients, by people who genuinely care about their guests and their craft.
Most Local Drink: The No Ka Oi (named because all the ingredients are from Maui). Ocean Vodka, Thai basil, lilikoi, lime, honey and egg whites. We sell a lot of Maui Brewing Co. beers, Ocean vodka, Pau vodka and Old Lahaina rum.
Best Bar Trend: One of the things I’ve really been thinking about lately, something that never goes out of style, is hospitality. Whether it’s at a neighborhood dive or a hip gastropub, the most memorable and revered bartenders are the ones who make their guests feel important, not those who promote their own perceived celebrity. The trend I would love to see take hold is a commitment to gracious hospitality over competition and self-promotion.
Fantasy Bug co*cktail: Is that for real!? Well, I think a preserved butterfly or live praying mantis as a garnish would be fun. Campari used to be colored with insect blood until 2006 and I think some Italian liqueurs still are. Those would be fun to play with.

Maui Brewing Co. Kahana is: Unpretentious. Our 25-plus whiskies plus the new premium rums, vodkas and tequilas on our drink list have something to complement all the beer styles on tap. If you asked our regulars what spirit to order, they would tell you to order a Pueo Pale Ale first and go from there. Dollar off all of our Maui Brews during happy hour is a solid deal but half-off our house food specialties like Maui Cattle Co. Pipikaula and the housemade bratwurst keep people occupied well past happy hour.
Most Local Drink: Our Mana Mai Tai is all about Maui. Mana, pineapple, a little orgeat and Coconut Porter. Welcome home. 10. The Red Bar at Gannon’s
The Red Bar at Gannon’s is: A stunning bar with a stunning view and fun bartenders. We have Fulton Tashombe jamming out a nice mix of jazz and modern pop on Fridays from 5-7pm and he often brings some talented friends. It’s all really good food on our menu and we have a great selection of wine, local liquors, craft co*cktails and beer. Our steamed clams are the biz, though, and if anything is to jump off as awesome, it’s them. I rock our Truffle Mac and Cheese about twice a week and the Burger the other two days I work. Of course, I’d be in it deep if I didn’t mention Bev’s Crab Fonduta–it’s rich, tasty and something truly unique.
Best Neighborhood Bar: I was just reading about bar closures recently. The rise of the cuisine and foody culture, I believe, has a lot to do with the decline of the dive bar. It doesn’t help that out here on Maui you can’t get a pitcher of beer, either. People more and more tend towards happy hour hangouts and generally a restaurant is going to have better eats. That being said, I think there will always be a place for the dive bar. Longhi’s, Mulligan’s and Manoli’s are the bars you can usually catch me at. I try to get to Kahale’s for my music fix and Comedy Night at Three’s is always great. Though I’d only call Kahale’s a dive, they are proud of being the best dive on Maui anyhow and Mulligan’s has that neighborhood pub feel while having some of the best live music you can get on the Southside.

Stopwatch is: A local country bar where you can get ice-cold beer with a shot of whiskey on the side, some good hot food and everybody knows your name. Our happy hour is pretty plain and simple.
