This article by The Kitchn explains that all rice is made up of two different parts of starch components: amylose and amylopectin. Now, I don't really begin to know what each really is, but sticky rice contains almost zero amylose and all amylopectin, and that's the reason it's sticky.

Why did my rice come out mushy in Instant Pot? ›

You most likely used too much water. 1:1 water to rice ratio is essential for all rice types. Use the exact same container to measure both rice and water. Some cups are standard American (236ml), others are metric (250ml) and the little plastic cup that comes with the Instant Pot is neither (160ml).

What is the secret to sticky rice? ›

The key to sticky rice is to not rinse the rice — this washes away the starch dust that allows the rice to clump. Soak the sticky rice in enough water to cover the rice. This softens the grain and the extra water helps add that fluffy texture. Soaking for 4-24 hours is a good range.

Lock the lid in place and set to cook at HIGH pressure for the following times: White rice (basmati, jasmine): 5 minutes. Long-grain brown rice: 10 minutes. Wild rice: 15 minutes.

Why did my rice burn in pressure cooker? ›

There isn't enough liquid

A closed valve isn't the only thing you need for pressure cooking. You'll also need an adequate amount of liquid (at least one cup) for the pot to actually reach the required pressure, creating the perfect environment for a burn warning.

Why is my rice cooker making sticky rice? ›

Cooked rice can feel sticky for a couple of reasons: too much water may have been used and/or the rice may not have been rinsed before cooking. Rinsing rice before cooking is a must to wash off excess starch. Otherwise, the cooked starch will create a sticky consistency, instead of the coveted fluffy, separate grains.
