Guinness Chocolate Cake is tender, velvety, and not overly sweet. If you love chocolate cake, you will love this recipe! The Guinness adds a rich complexity that gives the cake a creamy and satisfying texture.

Guinness chocolate cake is so easy to make with the help of boxed cake mix and your slow cooker!

Top it with Guinness whipped cream and you have a dessert to die for! I developed this recipe to be super easy, using a boxed cake mix and my trusty crock pot. You have to give this Guinness chocolate cake a try!

It's no secret, I love a good chocolate cake, but I'm usually too busy to bake. I mean, it's tough enough to find time to cook the healthy meals my family NEEDS, let alone take the extra time to pull together a recipe that technically is unnecessary (although I might try to argue that chocolate is actually necessary, ha! But I think that's another post for another time).

One way that I can squeeze in creating yummy treats for my family is to come up with recipes that I can whip up in a snap. If I can throw it together quickly without having to gather up a gazillion ingredients, you can count me in!

So how do you make Guinness chocolate cake with minimal effort and maximum yumminess? With the magic of a boxed cake mix! They aren't expensive, and using them will save you some measuring, decrease some of the mess, and reduce the number of dishes to wash. Fewer dishes??? I bet I am not the only one who likes the sound of that!

However, if you have the time and don't mind the extra dishes, you can definitely make your own chocolate cake mix.

What makes this cake different from the usual chocolate cake is the Guinness beer. I like to use beer in my recipes from time to time. My Crock Pot Chicken Thighs in Honey Beer Sauce will practically melt in your mouth. That recipe uses any kind of beer you like, although I typically use a lager.

As for baking, I think I only have one other recipe utilizing beer, which is a Malted Chocolate Stout Cake. That cake is not difficult, but it requires a longer list of ingredients. However, it results in an over-the-top cake that is perfect for special occasions...or for making ordinary occasions quite special!

If you are not a huge fan of Guinness, or even of beer in general, don't let that stop you from trying this cake. You don't really taste the beer, but it lends that a flavor complexity to the cake and keeps it really moist and mouthwateringly delicious. (Spell check is telling me that mouthwateringly is not a word. I don't care, I am using it anyway. 🙂 )

Guinness chocolate cake is amazing by itself, and even better dressed up with tasty toppings!

While this heavenly Guinness chocolate cake totally stands on its own, it's so special, I love to dress it up to make it look as special as it tastes! I didn't want to add too much sweetness with a frosting, so I decided to do a whipped topping.

If you have a hand-mixer, I advocate making your own whipped cream, because it is SOOOOO easy and tastes so much better than store-bought.

The whipped cream for this recipe is lightly flavored with Guinness, but you could absolutely substitute a little vanilla extract for the the Guinness and it will still be a great addition to this decadent chocolate cake.

Steps for making Guinness Chocolate Cake

Step 1.

Place cake mix in a medium bowl. Add sour cream, vegetable oil, and eggs.

Pour the batter into the lightly greased slow cooker, and cook on low for 2 to 2 ½ hours. Cake is done when you can shake the crock pot and the middle of the cake doesn't jiggle.

Step 3 - Pour the batter into the slow cooker, then cook for about 2 hours.

Step 4. (whipped cream - optional)

Right before serving, pour the heavy cream into a medium bowl. Beat using a hand mixer until it starts to thicken.

Step 5. (whipped cream - optional)

Add the sugar and Guinness, and continue to beat until stiffened.

Step 5 - Add sugar and Guinness to the heavy cream, and beat until fluffy yet stiffened.

Tips for making (and eating) your Guinness Chocolate Cake

  1. The batter will seem a little on the thin side. That is normal for this cake.
  2. Spray the slow cooker with a baking spray. If you don't have a baking spray, use a little vegetable oil. It helps to prevent sticking.
  3. You can serve the cake right out of the slow cooker. However, if you would like to remove it to serve later, run a silicone spatula around the edge of the cake to make sure it is separated from the sides. My recommendation is to cut the cake in half while it is still in the slow cooker, then remove each half separately. (It's a lot easier to remove one half at a time than to get the whole thing out at once.)
  4. The whipped cream is best made fresh right before serving. However it will keep in the refrigerator for a few hours. We usually keep the leftover whipped cream and use it the next day. It's a little less fluffy but still tasty!
  5. This cake is delicious on its own, but we like to upscale it with some cherry pie filling and/or chocolate syrup. Embellish as you see fit!

Ingredients

For the cake:

  • 15 ounces chocolate cake mix (1 box)
  • ¼ cup sour cream
  • ¼ cup vegetable oil
  • 3 eggs
  • 1 cup Guinness beer

For the whipped cream:

  • 1 cup heavy cream
  • 4 tablespoons granulated sugar
  • 3 tablespoons Guinness beer

Instructions

For the cake:

  • Place the cake mix in a medium bowl.

    15 ounces chocolate cake mix

  • Add the sour cream, vegetable oil, eggs, and Guinness. Mix well.

    ¼ cup sour cream, ¼ cup vegetable oil, 3 eggs, 1 cup Guinness beer

  • Spray the slow cooker with a baking spray (or just coat with a little vegetable oil if you don't have baking spray). Add the batter to the slow cooker and cook on low for 2 to 2 ½ hours (until the middle does not jiggle when you shake the slow cooker).

For the whipped cream (optional):

  • Place the heavy cream in a medium bowl. Beat with a hand mixer until the cream begins to thicken.

    1 cup heavy cream

  • Add the sugar and Guinness, and continue to beat until the cream is stiffened.

    4 tablespoons granulated sugar, 3 tablespoons Guinness beer

Notes

  • Don't worry if the batter seems a little thin, that's normal.
  • Don't skip spraying the slow cooker with a non-stick spray or your cake will stick.
  • Most of the time I serve the cake right out of the slow cooker. To remove it to serve later, separate the cake from the sides by running a silicone spatula around the perimeter. At that point, I cut it in half to lift it from the slow cooker using the spatula and a pancake flipper (It's tough to lift the whole thing at once so I do one half at a time.)
  • I recommend making the whipped cream right before serving for best results. You can make it a few hours ahead of time, however. Leftover whipped cream can be stored in the refrigerator for a day or two. It will lose some of its fluff but it will still taste good!
  • This cake can be served by itself, with the whipped cream, or for a super-special dessert you can upgrade it with fresh cherries, cherry pie filling, and/or chocolate syrup. Yum!
